GAMBAS AL PIL PIL CON CAVIAR DE COCO / PIL PIL SHRIMPS AND COCONUT CAVIAR


Hace algún tiempo tuve la suerte de visitar a Susi Diaz en su restaurante La Finca  valorado con 1 Estrella Michelin y Dos Soles  situado en la ciudad de Elche ( mi ciudad natal).Siempre que vuelvo a casa intento hacerle una visita ya que para mi es uno de mis restaurantes favoritos.Su cocina esta basada en el producto de la zona, se caracteriza por utilizar hierbas aromáticas y flores que ella misma cultiva. La creatividad esta presente en todos sus platos y combina a la perfección los sabores tradicionales con las elaboraciones de vanguardia.

A few months ago I was lucky enough to visit Susi Diaz´s restaurant La Finca , awarded with a Michelin Star and two Suns in the Campsa Guide, located in my home town Elche (Alicante). Every time I come back to Elche I attempt to visit it because it´s one of my favourite restaurants. Her cooking style is based on local products, one of her personal touches is the use of aromatic herbs and edible flowers grown in her own garden. Creativity is featured in all her dishes and flavor and tradition are perfectly combined with the most innovative culinary trends.


No os podéis imaginar lo que disfrute de su menú degustacion,este plato es uno de los que pude degustar la ultima vez, y me gusto muchisimo por lo sencillo de sus elementos y su combinacion perfecta de sabores y texturas.Por eso he querido reproducirlo en casa, ya que tenia grabado en la memoria su sabor.

You can´t imagine what a great time I had and how I enjoyed her tasting menu. I tried this dish  and I liked it a lot due to the simplicity of its elements and the perfect flavour and textures combination. That´s why I wanted to recreate it at home, I can´t take its flavour out of my mind since then.

AJO BLANCO DE COCO CON UN TOQUE DIFERENTE / COCONUT "AJOBLANCO" WITH A TWIST


Y el toque especial es, que en vez de utilizar el ajo de toda la vida he usado ajo negro.Si habéis leído bien!! ajo negro ..... una receta rápida, sencilla, y deliciosa!! 
Como sabréis en esta época del año con este calor, por la zona de Andalucia hay un plato muy típico que es el ajo blanco, pues bien esta es una versión de ese plato.
Con un toque especial con este producto gourmet ( el ajo negro) y os puedo asegurar que no os dejara indiferentes, ya que este producto ( el ajo negro) es una delicia para el paladar.
Es un producto originario de Japón, se obtiene metiendo las cabezas de ajo enteras, en una cámara sellada a temperatura y humedad constante durante sesenta días y después se deja oxidar en una sala especial durante 45 días.Durante este proceso el ajo va cogiendo el color negro característico.

"Ajoblanco" is a very typical cold cream from the southern part of Spain made with garlic, almonds and water. Traditionally we use regular garlic but I wanted to give this recipe a twist so in this occasion I´ve used black garlic instead. You have read well, black garlic. It´s a simple, easy and delicious recipe. 
Specially at this season of the year, with the high temperature we have in Andalucía, it´s made this traditional recipe because it´s light and refreshing.
This gourmet product gives it a special touch that won´t leave you indifferent, it´s a pleasure for the palate. If you have the chance, give it a try because it´s really versatile.
This product comes from Japan, and it´s obtained putting heads of garlic in a sealed room at a certain temperature and humidity contions for 60 days and then letting them set for 45 days which is what gives it that characteristic black colour.
